Some Alphonso mangoes have a physiological condition called "spongy tissue." It breaks down the pulp inside, forming unripe, acidic, white or pale yellow corky tissue with or without air pockets. This disorder usually occurs in certain areas of the mesocarp, which is the fruit's fleshy portion, next to the endocarp, which is the stone or seed.

It may be difficult to identify the afflicted fruit until the mango is sliced open because it may not show any outward signs.  When compared to unaffected mangoes, mangoes with spongy tissue may have an unfavorable off flavor and a less-than-ideal texture when eaten.
